Light Cocktail/Day Drinking
A refreshingly light (& low calorie) cucumber mint cocktail perfect for drinking on a hot summer day. Made with Ketel One Botanical vodka.
Notes: This is my new favorite summer cocktail! With “40% fewer calories than a glass of white wine” Ketel One Botanical vodka makes the perfect light cocktail. Distilled with real botanicals with no sugar, no artificial sweeteners, and no artificial flavors.
And, coming in at only 30% ABV, you can casually drink this cucumber mint vodka cocktail during the day without the drag or the hangover! (It’s so good you can drink it by itself!)
- 4 oz Ketel One Botanical Cucumber & Mint
- 1 bottle (6.8 oz)Fever Tree Cucumber Tonic Water
- 6 leaves Fresh mint
- 1 tbsp Fresh-squeezed lemon juice
- Optional: Tajin to salt the rim
Collect your ingredients. Pick 6 leaves of mint (more if you want to garnish with mint). Measure out vodka.If using Tajin or salt to rim the glass, place a generous amount on a small plate that you will press the glass into in a moment.
Add Vodka, Mint, and Lemon juice to a shaker. Add cubed ice on top of ingredients (about halfway). Shake generously for 10 seconds.
Finish and serve
Take a slice of lemon and run around the rim of the glass. Evenly dip the rim of the glass into the Tajin (or plain salt if you prefer). Put lemon slice along the edge of the glass. (Alternatively, you could also use a cucumber slice to garnish here too) Add ice. Pour in half of the cocktail mixture, then half of your Fever Tree Cucumber Tonic Water. Garnish with mint. Sip and enjoy your Ketel One Cucumber Mint Cocktail!
