Tasty Turmeric Egg Tofu

This Tasty Tumeric Egg Tofu Recipe is the perfect breakfast staple. It is easy to make, and can be eaten alone or as a filling for multiple breakfast recipes.

Notes: Just like any eggs you make, you can customize these however you like. Feel free to add onions, chopped peppers, or additional spices.

The type of tofu you select will depend on the texture you prefer. Soft tofu makes the best scrambled eggs for us, but firm or extra firm will make bite sized pieces that can easily be eaten with a fork.

We enjoy these alone with jelly toast, in breakfast burritos, or in casseroles!

My partner, Will, is the one who usually makes these (he is not vegan!) and he loves them!


  • 12 oz Soft Tofu (see notes)
  • 1 tbsp avocado oil (or EVOO)
  • 1 tsp tumeric
  • Salt and Pepper to taste


        Prep Ingredients

        Open your soft tofu and slightly drain it. (If using Firm or Extra Firm Tofu for your eggs – press with your hand slightly to remove excess liquid).

        Measure out tumeric and oil.

        Start cooking!

        Add oil to your non-stick pan and turn to high heat. Once hot, add soft tofu to the pan and use spatula to separate.

        Add tumeric, salt, and pepper. Mix all ingredients together in the pan. 

        Finish and serve

        Cook uncovered on high heat for 5-10 minutes stirring frequently (or until all juices are gone). Taste test and make adjustments.

        Fold into a tortilla, stuff into a croissant with fresh greens, or enjoy alone!
